Ingredients
  

Salad

  • 1 bunch Kale (curly or lacinato) stems removed and chopped
  • 1 apple chopped
  • 1/2 cucumber chopped
  • 1/4 cup shelled pistachios roughly chopped
  • 2 Tbsp fresh parsley chopped
  • shaved parmesan to top

Dressing

  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 2 tsp maple syrup
  • pinch salt and black pepper

Instructions
 

Massage the kale

  • Place chopped kale in a large bowl. Add a small drizzle of olive oil and a pinch of salt. Massage the kale with your hands for 1–2 minutes until it softens and darkens in color.

Add the mix-ins

  • Toss in the chopped apple, cucumber, pistachios, and parsley.

Make the dressing

  • In a small bowl or jar, whisk together the olive oil, vinegar, maple syrup, salt, and pepper until well combined.

Toss the salad

  • Pour the dressing over the salad and toss until everything is coated.

Top with Parmesan

  • Finish with a generous sprinkle of shaved or grated Parmesan just before serving.
