Fresh and flavorful kale salad with apples, cucumber, and crunchy pistachios tossed in an apple cider vinegar dressing for the perfect combination of flavors.

Dressing
2Tbspolive oil
1Tbspapple cider vinegar
2tspmaple syrup
pinchsalt and black pepper
Instructions
Massage the kale
Place chopped kale in a large bowl. Add a small drizzle of olive oil and a pinch of salt. Massage the kale with your hands for 1–2 minutes until it softens and darkens in color.
Add the mix-ins
Toss in the chopped apple, cucumber, pistachios, and parsley.
Make the dressing
In a small bowl or jar, whisk together the olive oil, vinegar, maple syrup, salt, and pepper until well combined.
Toss the salad
Pour the dressing over the salad and toss until everything is coated.
Top with Parmesan
Finish with a generous sprinkle of shaved or grated Parmesan just before serving.
