Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and add to the pan. Cook until golden brown and cooked through, about 5–7 minutes. Remove the chicken from the pan and set aside.
Build the sauce: In the same pan, add the shallots and sauté for 2–3 minutes. Add the garlic and tomatoes and cook for another 2–3 minutes, until the tomatoes begin to soften.
Make it sweet & tangy: Add the water, red wine vinegar, and honey. Stir everything together, scraping up any browned bits from the bottom of the pan. Let simmer for 3–5 minutes, allowing the tomatoes to soften and the sauce to slightly reduce.
Bring it together: Return the chicken to the pan and toss everything together. Cook for another 1–2 minutes so the chicken gets coated in the sauce.
Serve: Taste and adjust with additional salt, pepper, or a splash of red wine vinegar if desired.
