Roasted Broccoli Caesar Salad with Crispy Sourdough

Ingredients
  

  • 1 head broccoli cut into florets
  • 2 Tbsp Caesar dressing
  • 1/4 cup shaved parmesan cheese
  • 2 slices sourdough bread cut or torn into bite-size pieces
  • 1 Tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Roast the broccoli: Preheat oven to 425°F. Toss broccoli florets with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes, until browned and slightly crisp around the edges.Serve:
  • Make the sourdough crunch: Toss the sourdough pieces with olive oil, salt, and pepper. Add them to the baking sheet during the last 8–10 minutes of roasting, or toast separately, until golden and crispy.
  • Dress the broccoli: Let the roasted broccoli cool slightly, then toss with 2 tablespoons Caesar dressing.
  • Finish: Add the shaved Parmesan and crispy sourdough pieces. Toss gently.
  • Finish with an extra sprinkle of Parmesan and black pepper.
