Ingredients
  

  • 1 cup canned pumpkin puree
  • 1 cup unsweetened applesauce
  • 1 cup low-fat cottage cheese
  • 180 grams liquid egg whites about 5-6 large egg whites
  • 2 whole eggs
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground ginger
  • 1 tsp baking powder
  • 1 cup all-purpose flour
  • pinch salt
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease or line an 8×8-inch baking dish with parchment paper.
  • Blend the wet ingredients:In a blender, combine the pumpkin, applesauce, cottage cheese, egg whites, and whole eggs. Blend until smooth and creamy.
  • Add dry ingredients:Add the pumpkin pie spice, ginger, baking powder, flour, and salt. Blend just until combined (don’t over blend). You may need to scrape down the sides.
  • Remove the blender jar from the base and stir in the chocolate chips by hand. Optionally, reserve some to sprinkle on top before baking.
  • Pour the batter into your prepared pan and smooth the top. Bake for 25–35 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
  • Cool completely before slicing into bars.
