pinchsalt
1/2cupsemi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C).
Lightly grease or line an 8×8-inch baking dish with parchment paper.
Blend the wet ingredients:In a blender, combine the pumpkin, applesauce, cottage cheese, egg whites, and whole eggs. Blend until smooth and creamy.
Add dry ingredients:Add the pumpkin pie spice, ginger, baking powder, flour, and salt. Blend just until combined (don’t over blend). You may need to scrape down the sides.
Remove the blender jar from the base and stir in the chocolate chips by hand. Optionally, reserve some to sprinkle on top before baking.
Pour the batter into your prepared pan and smooth the top. Bake for 25–35 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
