Pumpkin Peanut Butter Energy Balls

Ingredients
  

  • 1/2 cup creamy peanut butter
  • ¼ cup pumpkin puree
  • 1 cup old-fashioned oats
  • ¼ cup pure maple syrup
  • 1 Tbsp chia seeds
  • 1 tsp pumpkin pie spice or to taste

Instructions
 

  • Add the oats to a blender or food processor and blend until they become a coarse flour.
  • In a bowl, mix together the peanut butter, pumpkin puree, maple syrup, chia seeds, and pumpkin pie spice.
  • Stir in the blended oats until everything is well combined.
  • Refrigerate the mixture for about 20–30 minutes to make it easier to roll.
  • Roll into 16 balls.
  • Store covered in the refrigerator for up to 1 week
