Peanut Butter Dates with Crunchy Chocolate Topping

Chocolate peanut butter dates with a crunchy topping are a healthy, sweet treat made with peanut butter, dark chocolate, and sunflower seeds.

Ingredients
  

  • 30 dates pitted
  • 1 cup peanut butter
  • 1 bag chocolate chips
  • 1 tsp vanilla extract
  • 1/2 cup sunflower seeds salted

Instructions
 

  • Line a baking sheet with parchment paper.
  • Open up pitted dates onto to lined baking sheet. 
  • Spread peanut butter inside the date. 
  • Begin melting chocolate chip morsels in the microwave in 30-second intervals, stirring in between. Stir vanilla extract into melted chocolate. 
  • Once the chocolate is melted, coat over dates. Top chocolate-coated dates with sunflower seeds.
  • Allow to set in the fridge for at least 1 hour. Enjoy!
