- 1.75 cups all-purpose flour
- 2 eggs
- 3/4 cup 100% pumpkin puree
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/3 cup milk of choice
- 1/2 cup unsweetened applesauce
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- pepitas for topping
Preheat oven to 350°F (175°C).Grease a 9x5-inch loaf pan or line with parchment paper.
In a large bowl, whisk together the eggs, pumpkin puree, applesauce, brown sugar, milk, and vanilla until smooth.
Add flour, pumpkin spice, cinnamon, salt, and baking soda.Stir just until combined — don’t overmix!
Pour batter into the prepared loaf pan.Sprinkle pepitas generously on top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
