Ingredients
  

  • 1.75 cups all-purpose flour
  • 2 eggs
  • 3/4 cup 100% pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup milk of choice
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • pepitas for topping

Instructions
 

  • Preheat oven to 350°F (175°C).Grease a 9x5-inch loaf pan or line with parchment paper.
  • In a large bowl, whisk together the eggs, pumpkin puree, applesauce, brown sugar, milk, and vanilla until smooth.
  • Add flour, pumpkin spice, cinnamon, salt, and baking soda.Stir just until combined — don’t overmix!
  • Pour batter into the prepared loaf pan.Sprinkle pepitas generously on top.
  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
