- 1 cup Israeli couscous
- 1 cup cucumber diced
- 1 tomato diced
- 1/4 red onion finely diced
- 1/2 cup feta cheese crumbled
- 2 Tbsp fresh mint finely chopped
- 1/4 cup sunflower seed kernels
- 1 lemon juiced
- 2 Tbsp olive oil
- salt to taste
Prepare the Israeli couscous according to the package directions. Drain if needed and let cool
Dice the cucumber and tomatoes and finely chop the red onion and fresh mint.
In a large bowl, add the cooled couscous, cucumber, tomatoes, red onion, feta, mint, and sunflower seeds.
Drizzle with lemon juice and olive oil. Season with salt to taste.
Gently toss everything together until well combined.
Refrigerate for 15–30 minutes if desired, allowing the flavors to come together. Serve chilled or at room temperature.
