Ingredients
  

  • 1 cup Israeli couscous
  • 1 cup cucumber diced
  • 1 tomato diced
  • 1/4 red onion finely diced
  • 1/2 cup feta cheese crumbled
  • 2 Tbsp fresh mint finely chopped
  • 1/4 cup sunflower seed kernels
  • 1 lemon juiced
  • 2 Tbsp olive oil
  • salt to taste

Instructions
 

  • Prepare the Israeli couscous according to the package directions. Drain if needed and let cool
  • Dice the cucumber and tomatoes and finely chop the red onion and fresh mint.
  • In a large bowl, add the cooled couscous, cucumber, tomatoes, red onion, feta, mint, and sunflower seeds.
  • Drizzle with lemon juice and olive oil. Season with salt to taste.
  • Gently toss everything together until well combined.
  • Refrigerate for 15–30 minutes if desired, allowing the flavors to come together. Serve chilled or at room temperature.
