- 1 cup carrots finely grated
- 1 cup almond flour
- 1/2 cup oat flour
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/3 cup pecans chopped
- 2 tsp baking powder
Preheat oven to 350°F. Line a small baking dish (8x8 or loaf pan) with parchment paper.
In a bowl, whisk together eggs, maple syrup, and vanilla.
Stir in grated carrots.
Add almond flour, oat flour, baking powder one by one.
Fold in nuts if using.
Spread batter evenly into the pan.
Bake 22–28 minutes, until set in the center.
Let cool before slicing into bars.
