Healthy Carrot Cake Bars (Flourless, Naturally Sweetened)

Ingredients
  

  • 1 cup carrots finely grated
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup pecans chopped
  • 2 tsp baking powder

Instructions
 

  • Preheat oven to 350°F. Line a small baking dish (8x8 or loaf pan) with parchment paper.
  • In a bowl, whisk together eggs, maple syrup, and vanilla.
  • Stir in grated carrots.
  • Add almond flour, oat flour, baking powder one by one.
  • Fold in nuts if using.
  • Spread batter evenly into the pan.
  • Bake 22–28 minutes, until set in the center.
  • Let cool before slicing into bars.
