Ingredients
  

  • 2 lb chicken breast diced
  • 2 cups broccoli florets
  • 1/2 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 3 packages ramen noodles discard seasoning packets
  • 1/4 cup low-sodium soy sauce
  • 1 Tbsp rice wine vinegar
  • garlic powder to taste
  • optional: sesame seeds, green onion, olive oil for garnish

Instructions
 

  • Preheat oven to 425°F..
  • Add chicken and veggies to a large sheet pan. Season with garlic powder and toss with soy sauce and rice wine vinegar.
  • Roast for 15 minutes.
  • Meanwhile, cook ramen noodles just until slightly tender, then drain.
  • Add noodles to the sheet pan and toss everything together.
  • Return to the oven for another 10–15 minutes, until chicken is fully cooked and veggies are tender.
  • Garnish with sesame seeds or green onions if desired, and serve warm.
