- 2 lb chicken breast diced
- 2 cups broccoli florets
- 1/2 red bell pepper sliced
- 1 yellow bell pepper sliced
- 3 packages ramen noodles discard seasoning packets
- 1/4 cup low-sodium soy sauce
- 1 Tbsp rice wine vinegar
- garlic powder to taste
- optional: sesame seeds, green onion, olive oil for garnish
Preheat oven to 425°F..
Add chicken and veggies to a large sheet pan. Season with garlic powder and toss with soy sauce and rice wine vinegar.
Roast for 15 minutes.
Meanwhile, cook ramen noodles just until slightly tender, then drain.
Add noodles to the sheet pan and toss everything together.
Return to the oven for another 10–15 minutes, until chicken is fully cooked and veggies are tender.
Garnish with sesame seeds or green onions if desired, and serve warm.
