Ingredients
  

  • 1 eggplant, large sliced into 1/2 inch rounds
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese mixed in with breadcrumbs
  • 1 tsp garlic powder
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • olive oil spray
  • salt and pepper to taste

Instructions
 

  • Prep the eggplant:
    Lightly salt the eggplant slices and let sit 10–15 minutes. Pat dry.
  • Bread the slices:
    In one bowl, beat the eggs.
    In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
    Dip each eggplant slice into egg, then coat well in the breadcrumb mixture.
  • Air fry:
    Spray the air fryer basket with olive oil.
    Arrange eggplant in a single layer and lightly spray tops with oil.
    Air fry at 375°F for 10–12 minutes, flip, then cook another 5–7 minutes until golden and crispy.
  • Add sauce & cheese:
    Spoon marinara over each slice and sprinkle with cheese.
    Return to the air fryer for 2–3 minutes, just until cheese melts.
  • Serve:
    Finish with extra Parmesan if you want (always yes) and serve hot.
