1tspgarlic powder
1/2cupmarinara sauce
1/2cupshredded mozzarella cheese
olive oil spray
salt and pepper to taste
Instructions
Prep the eggplant:Lightly salt the eggplant slices and let sit 10–15 minutes. Pat dry.
Bread the slices:In one bowl, beat the eggs.In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.Dip each eggplant slice into egg, then coat well in the breadcrumb mixture.
Air fry:Spray the air fryer basket with olive oil.Arrange eggplant in a single layer and lightly spray tops with oil.Air fry at 375°F for 10–12 minutes, flip, then cook another 5–7 minutes until golden and crispy.
Add sauce & cheese:Spoon marinara over each slice and sprinkle with cheese.Return to the air fryer for 2–3 minutes, just until cheese melts.
Serve:Finish with extra Parmesan if you want (always yes) and serve hot.
