Note: This makes a generous spice blend. Start by adding 1–2 tablespoons to your dish and adjust to taste.
Instructions
Season the chicken. Cut the chicken thighs into bite-sized pieces. Combine all the spices in a small bowl. Season the chicken with 1–2 tablespoons of the spice blend.
Cook the chicken. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned on the outside.
Add the onion. Stir in the diced yellow onion and cook for 3–5 minutes, until softened.
Add the tomato sauce. Pour in the can of tomato sauce and stir well. Let it cook for 2–3 minutes to combine the flavors.
Add the coconut milk. Pour in 1 cup of coconut milk and stir until the sauce is smooth and creamy.
Simmer. Reduce the heat to medium-low and simmer for 15–20 minutes, stirring occasionally, until the sauce thickens and the chicken reaches an internal temperature of 165°F (74°C).
Serve. Taste and adjust the seasoning as needed. Garnish with fresh cilantro if desired. Serve over basmati rice or with warm naan bread.
