Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream together the butter, brown sugar, and white sugar on medium speed until light and fluffy (about 2 minutes).
Add the blended cottage cheese, egg, and vanilla. Mix on medium-low until smooth.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
With the mixer on low, gradually add the dry ingredients to the wet mixture until just combined—avoid overmixing.
Stir in the chocolate chips using the paddle attachment or by hand. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between cookies.
Bake for 10–12 minutes, or until the edges are golden and the centers are just set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
