- 3 eggs separated
- 1/2 cup low-fat cottage cheese
- 1/4 tsp cream of tartar
- 1 Tbsp cornstarch
- 1 tsp honey
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
Separate the eggs into two bowls — egg whites in one, yolks in the other.
Blend the cottage cheese until completely smooth (use a blender or food processor).
In a large bowl, beat the egg whites with cream of tartar until stiff peaks form (about 3–5 minutes with an electric mixer).
In another bowl, mix the egg yolks with the blended cottage cheese, salt, cornstarch, and honey until smooth and fully combined.
Gently fold the egg white mixture into the yolk mixture in batches. Fold carefully to avoid deflating the whites.
Scoop the batter onto the prepared baking sheet, forming small rounds or "clouds" using a spoon or ice cream scoop.
Bake for 25 minutes, or until golden brown and firm to the touch.
Cool on a wire rack for a few minutes. Enjoy warm or at room temperature!
