Ingredients
  

  • 3 eggs separated
  • 1/2 cup low-fat cottage cheese
  • 1/4 tsp cream of tartar
  • 1 Tbsp cornstarch
  • 1 tsp honey

Instructions
 

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  • Separate the eggs into two bowls — egg whites in one, yolks in the other.
  • Blend the cottage cheese until completely smooth (use a blender or food processor).
  • In a large bowl, beat the egg whites with cream of tartar until stiff peaks form (about 3–5 minutes with an electric mixer).
  • In another bowl, mix the egg yolks with the blended cottage cheese, salt, cornstarch, and honey until smooth and fully combined.
  • Gently fold the egg white mixture into the yolk mixture in batches. Fold carefully to avoid deflating the whites.
  • Scoop the batter onto the prepared baking sheet, forming small rounds or "clouds" using a spoon or ice cream scoop.
  • Bake for 25  minutes, or until golden brown and firm to the touch.
  • Cool on a wire rack for a few minutes. Enjoy warm or at room temperature!
