Heat oven to 350°F. Line a loaf pan with parchment paper. Set aside.
In a medium mixing bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
In another large mixing bowl, combine sugar, eggs, applesauce, maple syrup, mashed bananas, blended cottage cheese, vanilla, grated carrots, and chopped walnuts. Mix well.
Take dry ingredients and incorporate them into wet ingredient mixture. Stir until well combined.
Pour batter into lined loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean. Slice and enjoy!
