Ingredients
  

  • 2 ripe bananas mashed
  • 2 carrots large, grated
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sugar
  • 1/4 cup maple syrup
  • 1 cup cottage cheese blended
  • 2 eggs
  • 1 cup flour
  • 1/2 cup walnuts chopped
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions
 

  • Heat oven to 350°F. Line a loaf pan with parchment paper. Set aside. 
  • In a medium mixing bowl, combine flour, baking soda, salt, and cinnamon. Set aside. 
  • In another large mixing bowl, combine sugar, eggs, applesauce, maple syrup, mashed bananas, blended cottage cheese, vanilla, grated carrots, and chopped walnuts. Mix well. 
  • Take dry ingredients and incorporate them into wet ingredient mixture. Stir until well combined. 
  • Pour batter into lined loaf pan. Bake for  55-60 minutes or until a toothpick comes out clean. Slice and enjoy!
