BBQ Turkey & Beef Mini Meatloaves with Maple Ketchup Glaze

Ingredients
  

  • 1 lb ground turkey
  • 1/2 lb lean ground beef
  • 1 egg
  • 1 shallot finely diced
  • 1/2 cup yellow corn
  • 1/2 cup peas
  • 3/4 cup breadcrumbs or you can use crushed chips
  • 1/4 cup BBQ sauce

Maple Ketchup Glaze

  • 1/4 cup ketchup
  • 2 Tbsp maple syrup

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  • In a large bowl, combine the ground turkey, ground beef, egg, shallot, garlic, corn, peas, chip breadcrumbs, and BBQ sauce. Mix gently until just combined.
  • Divide the mixture evenly among the muffin cups, pressing lightly to form mini meatloaves.
  • In a small bowl, whisk together the ketchup and maple syrup. Spoon or brush the glaze over the tops of each meatloaf.
  • Bake for 25–30 minutes, or until the meatloaves are cooked through and reach an internal temperature of 165°F (74°C).
  • Let rest for 5 minutes before removing from the muffin tin and serving.
