- 3 cans tuna drained
- 1 cup fresh spinach chopped
- 2 sticks celery chopped
- 2 eggs
- 1.5 cups Good Crisp potato crisps blended to crumbs
- 1/2 cup mayo
- salt & pepper to taste
- fresh dill to taste
Preheat oven to 375°F. Line a baking sheet with parchment paper.
Blend potato crisps in a food processor until they resemble fine crumbs.
Chop celery and spinach finely.
In a large bowl, combine tuna, spinach, celery, eggs, mayo, chip crumbs, salt, pepper, and dill. Mix until fully incorporated.
Use your hands or a scoop to form mixture into firm patties, about 2–3 inches wide.
Place patties evenly on the prepared baking sheet.
Bake for 10 minutes, then carefully flip each patty.
Bake for an additional 5–7 minutes, or until golden brown and internal temperature reaches 165°F.
Let cool slightly before serving. Serve as is, in a bun, or over greens.
