Ingredients
  

  • 3 cans tuna drained
  • 1 cup fresh spinach chopped
  • 2 sticks celery chopped
  • 2 eggs
  • 1.5 cups Good Crisp potato crisps blended to crumbs
  • 1/2 cup mayo
  • salt & pepper to taste
  • fresh dill to taste

Instructions
 

  • Preheat oven to 375°F. Line a baking sheet with parchment paper.
  • Blend potato crisps in a food processor until they resemble fine crumbs.
  • Chop celery and spinach finely.
  • In a large bowl, combine tuna, spinach, celery, eggs, mayo, chip crumbs, salt, pepper, and dill. Mix until fully incorporated.
  • Use your hands or a scoop to form mixture into firm patties, about 2–3 inches wide.
  • Place patties evenly on the prepared baking sheet.
  • Bake for 10 minutes, then carefully flip each patty.
  • Bake for an additional 5–7 minutes, or until golden brown and internal temperature reaches 165°F.
  • Let cool slightly before serving. Serve as is, in a bun, or over greens.
