In another medium bowl, add panko, and shredded coconut. Stir until well incorporated.
In a third bowl, combine flour with old bay seasoning.
Take each shrimp using tongs, and dip into the flour mixture, followed by eggs, and lastly into the coconut mixture. Repeat the process until all shrimp are coated.
Set air fryer to 360°F. Place shrimp into air fryer and spray with nonstick spray. Cook for 6 minutes, then flip shrimp spray with nonstick spray and bake for an additional 4 minutes.
Serve shrimp with your favorite dipping sauce. Enjoy!
